BBQ Macaroni Salad; Just Perfect for Summer Picnics

My family loves macaroni and pasta salads so I'm always looking for new recipes just to mix things up.  A few years ago I found a recipe for a barbecued macaroni salad in my Cook's Country cookbook.

Over the years we've modified the recipe to suit our tastes and it has become a new family favorite.  The tang of the barbecue sauce makes this pasta salad the perfect side dish for any summer picnic or barbecue.




Ingredients: 
1 box elbow noodles
2 stalks celery, sliced thin
2 medium carrots, diced
1 cup mayonnaise
1/2 cup barbecue sauce
sprinkle of cayenne pepper
sprinkle of garlic salt

Directions:

Boil box of pasta according to package directions then drain and rinse with cold water.



In medium bowl mix together celery, carrots, mayonnaise and barbecue sauce.





Add in pasta and mix until well coated.



Sprinkle with cayenne pepper and garlic salt.  (This time I added the pepper and salt before the pasta!)



If the pasta soaks up some of the mayonnaise and barbecue mixture you can always add more just keeping to same ratio (for example if you add 1 tablespoon of mayo add another 1/2 tablespoon of bbq).

Chill and serve.



My family just gobbles it up!

  2. This looks good. I love carrots, so I like the addition of carrots both for crunch and taste, not to mention color.

    1. We've added chopped tomatoes or cucumber a time to two also but find that the carrots and celery give it a nice crunch and color.
