A Healthier Chex Mix Recipe

My husband and boys eat a lot of Chex mix.  They love all the different flavors and varieties available but we often make our own mix.

We like to use a variety of crackers that we enjoy eating rather than the traditional ingredients and rarely make it exactly the same way twice.

When making our own mix we tend to stick to the traditional Chex mix recipe but I always cringe over the fact that it uses 6 TABLESPOONS of butter!



A few years ago I started substituting lemon juice for part of the butter and no one was ever the wiser!

Last week Alec helped me make some Chex mix and I walked him through our recipe:

1 Box Crispix cereal; I like to use this since I don't have to buy both rice and corn Chex, Crispix is rice on one side and corn on the other!
1 Package Cheddar Goldfish
1/2 Package Bagel Chips; usually we buy garlic flavor
A few handfuls of broken pretzels; We prefer to break them up so they aren't quite so large
This week we added 1 Cup  of Oyster Crackers
3 Tablespoons butter
3 Tablespoons lemon juice
2 Tablespoons Worcestershire Sauce
1 1/2 tsp seasoned salt
3/4 tsp garlic powder
1/2 tsp onion powder

We use a large glass bowl and mix all the dry ingredients up well.



In a microwavable glass measuring cup we melt the butter then add in the lemon juice, Worcestershire sauce, salt, garlic and onion powder.  We whisk them together and then slowly pour over our dry ingredients.  Stopping periodically to stir and make sure the butter mixture is evently distributed over all the crackers.

Then we microwave for 2 minutes at a time for a total of 6 minutes; stirring well between each 2 minute interval.

Then we turn the bowl out onto parchment paper or paper towels and let the mix cool completely before putting it in an airtight container.
