Triple Chip Cookies

My family loves chocolate chip cookies!  But I get sick of the same old chocolate chip cookies all the time and constantly look for ways to mix it up.

Last week I tried making Triple Chip Cookies and we just LOVE them!

The soft cookie mixed with the taste of butterscotch, chocolate & white chocolate chips-- yum!

They were so easy to make too!

Ingredients:

1 cup butter or margarine, softened
3/4 cups sugar
3/4 cups brown sugar
2 tsp. vanilla extract
2 eggs
2 1/4 cups flour
1 tsp. baking soda
1 tsp. salt
1 cup chocolate chips
1 cup butterscotch chips
1 cup white chocolate chips

Using a stand mixer I whipped up the butter, sugars, vanilla extract and eggs until light and fluffy.

In a separate bowl I mixed together flour, baking soda & salt then added it to the butter & egg mixture.  Mixing until everything was blended.

I poured in the three cups of chips and folded them in using a wooden spoon.

Once all the chips were mixed in; I used my cookie scoop to drop rounded teaspoonfuls of batter onto the cookie sheets.

I baked the cookies at 375 for 11 minutes.  Just until the edges were a light golden brown.  Then I let them cool slightly and moved them onto a cooling rack to cool completely.

I like to eat them while they're still warm and gooey but these were excellent cool and crispy too.  They exploded with flavors.   Just look at all those chips!
