Beef & Kale Pasta One Pot Dish

 I love a quick and easy one pot meal and we've been making up lots of them this time of year. To me, they are usually the ultimate comfort food with pasta, veggies, a sauce of some kind, and a kick of protein too. 

 


Ingredients: (serves 8)

Olive oil for sauteing onions & garlic

1 onion; chopped

2 cloves garlic; minced

1 lb ground beef; I use 93% lean

1/2 tsp crushed red pepper

1 Tablespoon Italian seasoning

10 ounces frozen chopped kale

5 cups beef broth

1 16 ounce box pasta

Top with: 

4 strips precooked bacon crumble

Parmesan cheese shreds, to taste

 

1. Heat oil over medium heat in a large pan and saute onions and garlic until fragrant and onion is lightly browned.  Then add in ground beef.


 2. Once the beef is cooked add in pepper flakes, Italian seasoning, and kale. If you are using a fattier cut of beef you might want to drain out any fat before adding in the seasonings and the kale. 


 3. Once kale is thawed out add in beef broth and bring to boil. Add pasta and make sure it is covered by the broth (or add a little more). Boil for 7 minutes or the length of time listed on the box of pasta you use. As the pasta cooks it will soak up most of the liquid. 


 4. Give everything a good stir and make sure there isn't too much broth left; otherwise continue cooking. I like to see 1/4 of an inch or so of broth at the bottom of the pan. 


 5. Top with the crumbled bacon and give it a minute or two to heat through.


 6. Serve hot with some Parmesan cheese.  


This was a huge hit with all the guys!

  4. Oh I love one pan pasta pots! I didn't know you could get frozen kale. Such a good idea to add in a little extra nutrition and give flavor. Looks so good!

    1. Me too! I did have to search through nearly the whole frozen veggie aisle but I found 2 brands that carried frozen kale.

    1. Thanks! I'm always trying to sneak a variety of veggies into our dishes.. and was thrilled when the boys didn't pick any of it out! I would have added mushrooms too but they definitely would have picked those out... and complained that I always "ruin" our meals with mushrooms.

  12. I never considered using kale for pasta! But that is a lovely idea. In the Netherlands we usually eat kale in a 'stamppot'.

  18. I love adding kale to dishes and this looks like a great combo. I add it to a breakfast bake instead of spinach and it's crunch takes it to a new level.
