The Best Cabbage and Quinoa Soup

 I was on the hunt for a hearty winter soup that was filled with veggies. I have made a few versions of cabbage soup before but this time I decided to try a version that was just veggies. I have made a few vegetable soups before but always found the taste rather bland. 

I was overjoyed when this one was not!  It was so easy to make too. 

Ingredients: Makes 8 -10 servings (depending on serving size)

2 carrots; peeled and sliced

2 sticks celery; sliced

1 cup pumpkin (or butternut squash; which is what I had on hand); cooked and mashed. 

1 onion; diced

1 cup sliced mushrooms

1/2 small head cabbage; shredded

3 cloves garlic; minced

14 ounce can diced tomatoes with the juice

6 ounce can tomato paste

6-8 cups broth (vegetable, chicken or beef is up to you)

2 Tablespoons coconut aminos or soy sauce

1 Tablespoon smoked paprika (regular will work too)

2 tsp. dried thyme

1 bunch fresh basil; chopped

1/2 cup quinoa


Making the soup:

Making the soup was so easy! I added all the ingredients except the quinoa to our crock pot and put it on low for the day making sure to give it a good stir. 



An hour or so before eating, I added in the quinoa and made sure to mix it in well.


It was delicious!

  2. I really think I would like that soup! It has all things I love. I used to make the WW veg cabbage soup. I really like the cabbage in a soup!

  14. I love how you are so adventurous with recipes! I made a couple of soups from bloggers, and Mike didn't really like them. He just doesn't like thick and creamy soups...which are my favorite!

    1. I tend to like thicker and creamy soups too but I'm trying to get away from them as the creaminess is usually caused by diary.. so I'm trying to embrace the more broth-y soups.
