Weigh- In Wednesdays: What I've Been Eating

I know I sort of abandoned my Weigh in Wednesday posts for a few weeks and I'll be totally honest that it was because I  have been getting completely disgusted with the numbers on the scale (that went right back up to and beyond my starting weight!).  I knew I needed to stop obsessing and have decided that rather than writing a weekly Weigh-in post I'm going to cut back to once a month. So on the 3rd Wednesday of each month I'll do a (hopefully) short wrap- up of what I've been doing. What is or is not working. And of course lots of yummy food photos! 


I sort of fell off the wagon and have been eating far to many chocolates, sweets, ice cream, etc.. weirdly I do count them and have never gone over my point values for the week and still have mostly blue dot days but I am realizing the closer I get to my goal weight the more I need to make the healthiest choices.

That said, I also don't want to live in a world where I can't go out to eat with my mother in law or my husband or my family.  I don't want to have to turn down all sweets and ban sugar from my life (though I could do better with moderating it!).

My body seems happiest right around 164-166 as that is where the scale has settled once again.  As of yesterday I was weighing in at 165 still 15 lbs. away from my goal!  It's frustrating but I'm not ready to give up or throw in the towel.  I'm also not going to beat myself up over it either.  I just know I have to redouble my efforts and start again.  Each meal, each day, each week, etc. is a chance to start again. 

But for the most part I feel like I have still been eating some pretty healthy meals and a few "new" ones that I want to remember... so this post is mostly going to be a photo dump of all the yummy meals I've been enjoying. 

Breakfast-- light English muffin with Brummel and brown spread, 2 deli sliced ham rolls and an apple-- 4 points

A plate of fresh veggies with my 647 bread with tuna and light mayo-- just 3 points!

crustless vegetable quiche with 647 bread and Brummel and Brown spread-- 3 points. 

Lots of fresh veggies, apple slices, and some pre-cooked chicken-- 0 points!

a "splurge" meal-- my own chicken soup recipe made with whole wheat orzo and 1/2 a grilled cheese using 1 artesian bread slice, Brummel & Brown spread, and some light shredded cheese-- 8 points

fruit, yogurt, 1/4 cup granola-- 4 points

Stuffed acorn squash & salad with dressing & croutons-- 3 points

Light English muffin with peanut butter and peach-- 5 points

Light English muffin with tuna & light mayo paired with peaches and tomatoes-- 3 points

Vegetable & tortellini soup-- best I could tell this was 4 or 5 points per serving. 

salad with Boca Chick'n patty, croutons and dressing-- 5 points

BBQ pulled pork tenderloin, riced cauliflower, corn, zucchini & mushrooms-- 5 points for the pork and BBQ sauce

  1. I think the main thing is that you're eating so healthy. Metabolisms change (and by that I mean slow down, sadly), hormones impact weight gain and loss as do of course calories consumed and burned. But by eating so healthy, I can't think of a thing wrong with indulging every now and then.

    1. Ugh! Don't I know it?! LOL. I hate that our metabolisms change so much as we age... there is only so much I can do to combat that.

  5. Your means look yummy and nourishing. I'm glad you're not trying to force yourself into the "all or nothing" way of thinking. We need to make healthy choices, but it's ok to enjoy a treat now and then. I think you're doind an excellent job.

    1. I can't.. that and cards just can't go altogether. I can cut back, I can make substitutions most of the time but I can not cut either one of them out entirely. I think I'd be miserable and make everyone else miserable too.

  7. So sorry the scales haven't been playing fair and the weight loss is not going well. It sounds very frustrating but well done for not giving up. Everything you eat looks so healthy.

  8. You do get in such a variety of healthy foods, and you should be very proud of yourself for that regardless of what the scale says. I'm cheering you on!

  9. Yeah for pulled pork! We have been eating that last weekend too, from the bbq!

    1. I usually don't eat it since I'm not that big of a pork fan but I was much too tired to cook up the shrimp I had planned to eat that night since I was already making quite a few other dishes for the whole family.

  11. I love your common sense approach to still being able to enjoy special times. It's not an all or nothing way of living which so many people make it.
    The one thing we learned from our naturopath was that not all people respond to food exactly the same. So even though you're in your point range, it could be that something isn't jiving for some reason. Not that it's easy to figure out, but it makes sense.
    But don't give up. Not because I think you should lose weight, but healthy eating is high on my list of priorities, and I feel like it helps us in the long run!!

    1. I keep thinking I must be eating something my body doesn't like (or in the wrong combinations as I know that sometimes makes a difference too) but I'm just trying to keep that healthy eating in mind and focus on lots of fresh veggies and lean proteins.

    I stayed the same through out December which is what I wanted to do and not gain any weight over the Holidays like I usually did but I seemed to plateau in Jan. and Feb. I now have started to lose again and I am down 45 pounds since June 1st...I do a 16/8 hour daily Fast and only eat one meal a day and try to keep my caloric intake at around 1200 to 1500 a day. I do not eat after 7 pm at night and that has really helped immensely with my acid reflux and IBS symptoms...I try to walk at least a half hour a day..The past week though I have not been able to do much walking because I have had a bad Cold and it has either been snowing or raining.....Don't beat yourself up because each day gives us a new opportunity to get back on that wagon!!

    1. Exactly and congrats to you! Glad you are seeing the scale start to move again. This time of year it is so hard to get outside each day-- we have had snow/rain and high winds almost all week and I am anxious to head out hiking today.
