Recipes We've Been Making Lately

 We've been trying out a lot of new recipes lately and a few of them have made it onto permanent rotation of our menu... like the teriyaki rice casserole & cream- free shrimp carbonara.  



1.  Stuffed shells by Mom on Time Out-- When I realized that none of my boys knew what stuffed shells were I went searching for an easy recipe.  It took us weeks to find jumbo shells at our groceries stores but when I finally did I whipped up a batch and they really enjoyed it.  Next time I'd add a bit of thawed frozen spinach to the cheese mixture though. 


2. Teriyaki Chicken Casserole by Life in the Lofthouse-- This was delicious and perfect 'as is'; it was filling and low in Weight Watcher's points.  We've made this a few times already! 


3.  Apple Butternut Squash casserole by Our Wabi Sabi Life-- This was a dish that I prepared for my husband and I.  I did like it but next time I would cut back on the bacon, sage, and thyme and just let the flavors of all those delicious fruits and veggies shine through.  


4. Egg Roll in a Bowl by Pink Lady-- Now I am not really a fan of egg rolls but when Holly showed this recipe on her blog I thought it looked quite tasty and best of all following her recipe (with 4 large servings in mind) it was only 1 WW point!  We did like it but next time I think I'd cut back a bit on the ginger and use teriyaki in place of the soy sauce.  


5.  For years I've been making my own spice mixes-- we use this Taco seasoning recipe, this Italian dressing mix without any sugar, and the cream of anything soup mix. 


6.  This shrimp carbonara from Wander cooks-- I slightly overcooked the egg wash but it still tasted great!  We added shrimp, peas, and mushrooms to our recipe to make it a more filling meal but I followed the same basic recipe and directions doubling amounts when needed.  It was a huge hit and one I know we'll be making again. 


7. Applesauce jumble cookies from Pink Lady.  We all ate a couple and then my husband took the rest to work and he told me they were gone by lunchtime! 


8.  We bought some delicious salmon and used Penny's Passions parmesan basil salmon recipe more than once these past few weeks.  It's so easy and so tasty!


9.  Ian requested this delicious no bake chocolate peanut butter pie for his birthday.  It looked so good I toyed with making two of them just so we'd have leftovers! 


10. These  Chicken Caesar salad wraps  were not as big a hit as I had hoped.  Evan only ate the chicken in the wrap since he doesn't like salad and Alec doesn't eat cold chicken or wraps so he just had a salad.  It did make for a nice quick and easy game night meal though as I had everything prepared ahead of time so I only had to dress the salad and assemble the wraps when we got home.  We used Fiber One wraps and Marzetti Simply 60 Creamy Caesar dressing to make them more WW friendly.

    1. Yes, I love that I can skip the sugar too; so many mixes have a crazy amount of sugar in them.
