Creamy Pesto Chicken Noodle Soup

 There is nothing quite like a hearty soup on a cold winter's night!  I am always on the lookout for new soup ideas and heard of a chicken pesto soup that I thought sounded delicious.  Not having made one before I pretty much made up the recipe as I went along.  



It was a simple soup to make and the addition of the pesto made the whole house smell so good! 

Ingredients:

2 cups cooked diced Chicken

2- 1.2 ounce packets Creamy Pesto (I used this one from Knorr)

1 cup sliced Carrots

1- 15.5 ounce can White Kidney Beans; drained and rinsed

2 Tablespoons Lemon Juice

32 ounces Chicken broth 

4 cups water

2 cups Egg Noodles

2 cups Heavy Cream 

In a large stock pot I combined the chicken, Pesto seasonings, carrots, beans, lemon juice, chicken broth, and water and let it simmer most of the day until the carrots were cooked through. 

30 or so minutes before serving I added in the noodle and cream and as soon as the noodles were tender I ladled up our dinner.

  11. Using pesto in soup is a great idea! I've not tried the Knorr pesto sauce packets, they sound really good!

  12. Oh my, this sounds so good! I've never been a huge fan of traditional chicken noodle soup, but adding pesto to it would be a game changer! I love pesto so much!

    1. I can't imagine not liking traditional chicken noodle soup! But this does add such a nice flavor kick and with the cream it didn't seem like chicken noodle soup at all.
