What's Up Wednesday- September Edition

Today I am linking up with Shay and Sheaffer and all their blogging friends to talk about What's Up.  We just returned home from vacation on Saturday and are busy settling back into real life.
Let's dive right in!

What We're Eating This Week: 

Sunday: Teriyaki chicken, rice pilaf, roasted asparagus and salad along with some Carvel Ice Cream Cake for Evan's birthday.

Monday: Weight Watcher's American Chop Suey with salad



Tuesday: Ham steak, couscous, and fresh corn on the cob

Wednesday: BLT sandwiches with butternut squash fries and salad



Thursday: Chicken fingers, white rice, and green beans.

Friday: Weight Watchers pizza with salad



Saturday: Baked Haddock with baked potatoes and broccoli

What I'm Reminiscing About: Our trip! I'm busy going through ALL the photos I took each day and setting up new blog posts about each of our adventures.  We saw 5 states in 8 days (Colorado, Wyoming, South Dakota, Nebraska, and Iowa) and had such wonderful weather too.  I have a good dozen posts scheduled and scattered throughout the whole month of October!








What I'm Loving: These pretzels are a Dakota staple and we stumbled upon them quite by accident.  We thought we were just buying a bag of pretzels but they are loaded with flavor and we all found them quite addicting!



What We've Been Up To:
Other than our family vacation this month has been full of fun.  My sister and nephews came to visit for what turned into a two week vacation thanks to the hurricane circling the Carolinas.  We celebrated 3 birthdays (including Evan's turtle party), went hiking a few times with our hiking group, toured Mowery Gardens, decorated the house for fall,  and made lots of doctor, dentist, and other assorted appointments (for a total of 5 of them!) and enjoyed lots of time outside.







What I'm Dreading: I have my first mammogram appointment this morning and I am really dreading it; I just don't like any doctor's type appointments and am quite resistant to all but the most basic procedures but my doctor convinced me I just can't put this one off any longer. I also have an ultrasound & gynecologist appointment coming up that I am really not looking forward to either.  I will be so glad then these are behind me!

What I'm Working On: Lots and lots of blog posts!  I'm also getting our photos from vacation developed this week and want to start working on lots of scrapbooking pages.


What I'm Excited About: With our latest trip behind us my thoughts and planning have already turned to our Universal/ Disney trip and I just can not wait!

Our last trip to Universal was 5 years ago and I am having a great time looking through our old posts and photos (here and here).




Our last Disney trip was 6 years ago and we can't see all the new stuff!!  (Day1, 2, 3, 4, 5, 6)  We did decide to stay off site and rent a house this time so we'll have a car to freely get around both properties.  We've always stayed at Disney when going to Disney so this should be a whole new experience; not to mention not having anyone that needs naps!






What I'm Watching/ Reading: With all that time spent on the plane and in the car I managed to read 9 books this month (I'll re-cap them all next Sunday October 5th)!  My favorites were Under Currents and The Unhoneymooners.




I've been finishing up the final season of Brothers and Sisters and we started watching season 7 of The Ranch

What I'm Listening To: My boys yelling, laughing, and playing video games.

What I'm Doing this Weekend: Hopefully not much more than going on a date with my husband.  I'm looking forward to a nice, relaxing weekend.

What I'm Looking Forward to Next Month: The explosion of fall colors in the trees.  We were only gone for a week but we can already see some changes in the leaves around us and I just love all the color that blooms in October!



What Else is New: We are officially starting school next Monday! Wish us luck!  Between Chemistry, Algebra 2 and foreign languages this homeschooling thing can get quite intense at times.

    1. We had a great time! The hike was so much fun (if a bit crazy at times-- one portion of the stone "steps" had a waterfall coming right down the center of them from rain the night before!).

    1. We weren't in KC-- We flew out of Omaha and had a layover in St. Louis so those would have been the closest stops to you. I was thinking of that when we were out that way; If our plans had changed at all I was going to contact you. :)

  4. I can't wait to hear all about your vacation. I know what you mean about the doctor visits. I scheduled several appointments that I needed all in one day just to get them over with!

  5. I loved The Unhoneymooners! And we are going on a Disney cruise in January which I am really excited about -- it's our second one. Disney just knows how to do things well.
