August Pinterest Challenge-- Blueberry Vanilla Popsicles
Welcome to the August Pinterest Challenge Blog Hop, hosted by My Pinterventures. The purpose of this Pinterest Challenge is to motivate all the participants of this hop (and you too) to not just pin, but to make it happen!
This month the boys and I decided to try our new Popsicle mold and make these yummy Blueberry Vanilla Breakfast Popsicle by Style Me Pretty Living.
Of course (as usual!) I did not completely follow the recipe. We didn't have fresh blueberries, my younger boys don't like maple syrup, and I only had plain yogurt instead of vanilla yogurt.
So we read the recipe and substituted here and there.
Ingredients:
1 cup frozen blueberries
1/2 cup water
7 Tablespoons sugar; divided
1 cup plain yogurt
3 teaspoons vanilla extract
1/2 cup skim milk
In a small saucepan we combined the frozen blueberries, water, and 3 tablespoons of the sugar. Over high heat we brought the mixture to a boil and used the wooden spoon to smash most of the blueberries. After just a few minutes of boiling we removed the pan from the heat and set it aside to cool completely.
Meanwhile in a small bowl we combined the plain yogurt, the remaining sugar, vanilla extract and milk.
Once it was all combined we began scooping small amounts of the yogurt mixture into our molds.
Once the berries were completely cool to the touch we added them in on top of the yogurt mixture and topped off our molds with the remaining yogurt. We had just enough of each mixture to make exactly 10 pops.
Following the manufacturer's instructions that came with the mold we set our pops in the freezer for an hour to begin setting up.
After an hour we put the cover on and inserted the Popsicle sticks so that 1/3 of the stick was left sticking out. Then we put them back in the freezer for 4-5 more hours until they were frozen solid.
We ran a bit of hot water over the molds and following the instructions that came with the mold once again we managed to get all our pops out of the mold fairly quickly and completely intact. I just love this mold set!!
We wrapped each pop in freezer paper and put them inside a Ziploc bag in the freezer and enjoyed them tremendously over the next few days.
With only 65 calories per serving these are such a wonderful and light summer treat! We enjoyed them and can't wait to make lots of other pops and flavors.

OOO, these sound good.My kids loved making their own lollies (that's what we call them here int he UK) when they were younger. I love yogurt and blueberries together.

DeleteI like that you like to try out new recipes because this way and through this challenge I get inspired by you! Loved the zuccini pizza crust and I am sure I will love these popsicles. I will habe to make room in my teeny tiny freezer now.

ReplyDeleteSadly we didn't get many fresh berries at all this year... our bushes have been decimated the last few years by gypsy moth caterpillars and then this year they were so full of bees and hardly any berries that we didn't really bother.

I love strawberries and have been wanting to try this recipe with them but each time I buy the strawberries they all get eaten before I've had a chance to make them.

DeleteThey look so wonderfully creamy! I tend to stick to keep plain yogurt because it's so versatile. You can make it sweet or savory, and have more control over the flavor. Glad you all enjoyed your popsicles. I have a feeling you'll make good use of your mold :)
