BBQ Bacon Potato Salad

Try a recipe that combines potato salad and my family's favorite BBQ macaroni salad.

I typically am the only one that really enjoys potato salad in this house but I figure if I keep trying new recipes I'm bound to find one that someone else will enjoy too.



I know my boys love barbecue sauce and I thought this smoky flavor combined with some bacon, potatoes, and veggies just might convince them to give potato salad another try.

It was a HUGE hit with my whole family!

Ingredients:

6-7 large russet potatoes; peeled and cubed
1/2 cup shredded cheese (we used Colby Jack but cheddar would work well too)
1 lb bacon, cooked & sliced 
4 stalks celery, sliced
1/2 cup BBQ sauce
1/2 cup mayonnaise
Salt and pepper; to taste

After peeling and cubing the potatoes I put them in a large pot of water to boil just until soft.

While my potatoes were cooking I combined the shredded cheese, bacon and celery in a large bowl.


Once the potatoes were done cooking and I had both drained and cooled them with some cold running water I put them in the bowl with the cheese, bacon, and celery and added my mayonnaise and BBQ sauce.



It really was so delicious and unlike any other potato salad I have ever had before.

  1. I"m a big fan of potato salad, too, and usually the only one in my family who will eat it (good, more for me!). This looks DELICIOUS!
