Crock Pot Vegetable Tortellini Soup Recipe

I have been wanting to make a vegetable and tortellini soup for a few months now.  Each time I bought all of the ingredients my family convinced me to make something else with them instead... like plain old tortellini and sauce.

One snowy day I decided to just make the soup in our crock pot and I tried to call upon a favorite vegetable soup I had eaten at a local shopping mill (an old factory that has been converted to shops and little cafes).




This recipe did not disappoint!  It was flavorful and the chunks of vegetables and pasta made it nice and hearty on a cold winter's night.

Ingredients:

1- 14.5 ounce can of diced tomatoes
1- 24 ounce can pasta sauce
2 large carrots; sliced
2 stalks celery; sliced
4 cups water
1/2 cup sliced mushrooms
1 1/2 cups beef broth
1 Tablespoon dried minced onion or 1/4 cup fresh chopped onion
2 tsp. minced garlic
1 tsp. Italian seasonings

1 bag frozen cheese tortellini
1 cup ditalini or small pasta pieces

1.  I combined the first 10 ingredients in my crock pot and set it on low for the day; I started my soup around breakfast and didn't add the pasta in until 1 hour before serving.


2.  An hour or so before serving I added in the pasta and waited until they were cooked through to serve the soup.


The soup was quite flavorful!  There was a lot of broth with it, but for the sake of the photos I scooped out lots of the vegetable and pasta chunks.
