A Lightly Lemon Cake

My mother loves lemon cake and she usually asks for one on her birthday.

This year she broke tradition and asked for a chocolate and vanilla cake and my middle son was so disappointed.  I didn't realize he enjoyed the lemon cake too until he asked if he could make one for his own birthday.



Of course I said sure and I searched all over Pinterest reading all sorts of different lemon cake recipes until finally deciding we'd take our favorite vanilla cake recipe and add in some lemon pudding mix and fresh lemon zest.  It was the perfect lemon cake with a light lemon taste and rich buttercream frosting.





He LOVED it!  And he had the best time making it.

Here's our cake recipe:

1 1/2 sticks butter, softened
1/2 cup sugar
2 eggs
2 tsp vanilla extract
2 1/2 tsp baking powder
1/4 tsp salt
2 1/2 cups flour
1 1/4 cup milk
Zest from 1 lemon
1 box lemon instant pudding mix

1. In the bowl of our stand mixer we creamed the butter and added in the sugar.  We slowly added in the eggs and vanilla.

2. In a separate bowl we mixed together the baking powder, salt, and flour then slowly added it into our stand mixer alternating some of the flour mixture with milk.

3. We then added in the lemon zest and the pudding mix and poured them into two 9" cake pans that had been greased and floured.

4. We baked the cakes in a 350 degree oven for 20-25 minutes until the center of the cake bounced back when we touched it.

After cleaning up the kitchen and leaving the cake to cool we came back the next day to make the frosting and frost our cake.

To make the frosting we used:

2 sticks butter, softened
4 cups powdered sugar
2 tsp. vanilla extract
3 Tablespoons milk

In the stand mixer we beat the butter until light and fluffy and then slowly added in the powdered sugar, vanilla extract, and milk.

We piped the frosting onto the cake and at the last minute Alec decided it needed some sprinkles.


We found some silver star sprinkles in our cabinet and added them around the edge for just a touch of sparkle.



He could not wait to dig in!

  3. How fun! I love to see parents and kids baking and cooking together! And what a beautiful job you both did. I do lots of lemon recipes because it's one of my favorite flavors.
