Pesto Pasta with Mixed Veggies

My boys are pretty picky eaters.  Individually they eat a variety of foods but trying to find a meal they all enjoy is really tough.

A few weeks ago my oldest son asked me to make some pesto pasta, a meal that they do all enjoy but which I often forget about.  Of course, I agreed since it is such an easy meal to make!


To make this pesto pasta you will need:

1 box pasta (any size and shape works just fine)
Pesto (I prefer my homemade sauce but have used a variety of jarred and powdered mixes)
1 bag mixed frozen vegetables
Parmesan cheese (optional)

First boil the water and cook pasta according to package directions.  During the last 5 minutes of cooking I add the whole bag of frozen vegetables to the pot to heat them up as well. 

I drain it all together reserving 1/8- 1/4 cup of the pasta water.  

Pouring the pasta and vegetables back into the pot I add a good 1/4 cup or so of the pest to it with a bit of the pasta water and mix until thoroughly combined.


If it looks dry I add a bit more water, if it looks like I don't have enough pesto, I add a bit more and adjust the batch to our taste. 

When I'm satisfied with how it looks (and tastes) we serve it up for dinner and most of my boys add a bit of Parmesan cheese on top.
