Cheesy Herb- Crusted Pork Chops

Looking to shake things up one day I went in search of a new pork chop recipe.  I wanted something different and filled with flavor.  



Well this recipe sure fit the bill; but I didn't have all the ingredients it called for.  

It did however remind me of another recipe my sister had given me for cooking delicious chicken.  We just mix grated Parmesan cheese and mayonnaise; spread it over the chicken and it all bakes up to a nice bubbly golden crispy crust that all of my kids like (even the ones that HATE cheese and mayonnaise!)

So I thought I would modify the recipe slightly for baking up some tasty pork chops.  This time I added some herbs and Panko crumbs to the grated Parmesan cheese and mayonnaise.

Here's how I made them:


First I laid the pork chops in the pain and patted them dry with a paper towel.


Next, in a small glass bowl I mixed equal parts Parmesan cheese and mayonnaise.  I used about 1/4 cup of each for my 4 pork chops.  I added 1 minced clove of garlic, a few dashes of salt, 1 tsp or so of parsley, 1 tsp. chopped dried onion and some dried chives. (Sorry I don't have exact amounts; I cook a lot by sight, smell and taste). 


I spread a bit of the mixture onto each pork chop.  I wanted a fairly thin coating knowing my younger two boys do not like mayonnaise or cheese. 


Once I had the cheese mixture all spread on I used a canister of Panko crumbs to lightly sprinkle breadcrumbs across the top of the pork chops. 


I baked them at 350 for 30 minutes until the pork chops were cooked through and the bread crumbs were toasted brown. 

My younger two did not end up liking this recipe at all but my older son, myself and my husband thought it was quite tasty!  I would definitely make it again and cook my younger two a plain pork chop on the side.

Cheesy Herb- Crusted Pork Chops:


Ingredients:

4 Pork chops
1/4 cup mayonnaise
1/4 cup Parmesan Cheese
1 clove minced garlic
Dash of salt
1 tsp. parsley
1 tsp. dried minced onion (or onion powder)
1/2 tsp. chives
Panko Crumbs (about 1/2 cup total)

1.  Lay pork chops in a pan and pat dry with towel.
2.  In a small bowl mix mayo, cheese, garlic, salt, parsley, onion and chives.
3.  Spread cheese mixture over the top of pork chops.  Sprinkle with Panko crumbs.
4.  Bake at 350 for 30 minutes until pork chops are cooked and breadcrumbs are lightly browned.
