An Oreo No-Bake Cheesecake for Summer
This month's Pinterest challenge was all about 4th of July & summer. I immediately thought of making up a yummy new recipe with Alec. I used to prepare a fun dessert or cake each year for our family's 4th of July picnic and Alec took that over a few years ago.
We finally settled on making a 4th of July themed cheesecake. We finally settled on this pin to use as our inspriation.
We did have to make a few changes as we could not find Fireworks Oreo cookies or Red Velvet Oreo cookies at our store but that's OK. We used regular Oreos and our dessert still tasted wonderful and looked quite festive.
We also weren't serving a large crowd so we wanted to make just a 9" springform pan size dessert so we adjusted our ingredients accordingly.
For the crust:
25 crushed Oreo cookies
6 Tbsp. butter, melted
For the filling:
2- 8 ounce packages cream cheese
1/2 cup sugar
1/2 tsp. vanilla extract
4 ounces Cool Whip
8 Oreo cookies, chopped
handful of red, white and blue sprinkles
For the topping:
Cool Whip
Sprinkles
In a medium bowl we combined the crushed oreos and butter then pressed it into the springform pan going up the sides slightly.
In the stand mixer Alec combined the cream cheese packages, with sugar, extract, and cool whip. He poured 1/2 the batter into his springform pan and then added sprinkles to the remaining portion in the mixer bowl. He then spread the remaining cheesecake into the pan and let it set in the refrigerator for a couple of hours.
Just before serving we added the rest of the Cool Whip to the top of the cheesecake and decorated with both red/white/blue sprinkles and some star sprinkles.
It was delicious and didn't even last 24 hours in this house.
